Loyal L’hermitage
“I have a wine list that is created for the purpose of being sold,” says Herve Martin, Chef/Owner of Le Hermitage restaurant. When it comes to Champagne and Burgundy wines, Martin may be the best wine salesperson in the lower mainland. But it is the entertainment offered by sobering of the end of a Champagne bottle to uncork the showy gush of fizz and foam that has made this little 56 seat old French styled dinning room so much fun for loyalist patrons.
The lucky guest that orders a bottle of Champagne is offered a chance to slice off the cork with a handsome saber under the watchful supervision and guidance of certified “sabreur”, Herve Martin, a member of the confrerie de sabre d’or. This dramatic piece of theatre is unforgettably exhilarating for the lucky guest who holds the blade and gets an official certificate mailed to him or her. “It adds to the fun of bubbles,” says Herve Martin. “I don’t know what they all do with their certificate. They may hang it in their washroom; I don’t ask what they do with it.” He estimates that in the past ten years over 500 certificates may be decorating office walls or washroom doors in the city.
Herve Martin was raised in Burgundy in central France where pinot noir and chardonnay grapes reign supreme in the vineyards and “coq au vin” is top gruel on the stoves. He moved to Canada in 1982 and seventeen years ago, opened the Hermitage restaurant following his executive chef role in opening the Pan Pacific hotel restaurant in 1986.
“A large part of my clientele are connected to Europe, and especially France.” Many of them have a chateau or canal barge waiting for them for their holidays and when they come here, they like to drink French wines.”
His sister’s Burgundy estate produces his top selling red wine, Chateau de Chamilly, but 350 other labels fill 16 pages, including $25 to $3000 bottle cellar is designed for selling, not collecting.
The cozy, old world room is a refuge for duck and lamb lovers, prepared by a French trained chef from Brittany heads the kitchen, not because classically chef Herve Martin can’t cook, but that he discovered a greater gift. “Le Hermitage became much more successful when I left the kitchen and showed my face,” he says. “Now I personally welcome each client at the door.” He says that his secret ingredients are consistency and a gift for providing a sincere performance that makes a guest feel happy and important. He argues that French food is not expensive. “We don’t charge $5 for French fries,” points out Herve Martin, “and our beautiful French bread is free!” And what does this Frenchman love to eat? “Good cheese, bread and a glass of wine make me very happy. I can eat a round of Camembert by myself.”
This restaurant celebrates a seventeenth birthday and 21% increased business this year, and both statistics are impressive in a city that applauds new opening more enthusaticaly then survivors or longevity. “I’m proudest of saving a restaurant from bankruptcy 14 years ago,” says Herve Martin. “Now it works and we’re doing great.”
