How To Make The Worlds Greatest Pesto
My friend big Tony the panel beater and fantastic Italian Chef comes over for dinner regularly. Whenever Big Tony comes to visit, we provide the beers and the food and Tony cooks. Every time we have tony, over for dinner we always tell him he should open a restaurant and maybe one day he will. Tony cooks as he does because as a boy in Italy each day after school, he would help his grand father in his restaurant in Venice, and his traditional Italian recipes are amazing. So stay posted because, I am about to share one of his very best with you right now.
Tony knows that I love to write and he is happy to share all these wonderful recipes online. He figures if the comments and feedback start to get regular and they are all good then he probably will start an Italian restaurant. Therefore, after you cook up a few of Toni’s articles do me a favour and let us know if you enjoy them.
All of Tony’s food tastes fantastic but occasionally he out does himself. The Pesto recipe I am about to share with you is one such effort that is quite simple to prepare and will have the friends you serve it to talking about your pesto for months. You do not have to tell anyone where you got your pesto recipe but if you love the way it turns out please shoot a quick comment on the article. I have been trying to talk Tony into opening his own little restaurant in our home city for a couple of years now, and naturally, I want to be a silent partner so I can eat and share in the profits. Anyway I digress lets get on with the recipe for the Worlds Greatest Pesto.
If you do not have the ingredients, I list in your home pantry not them down and make a quick visit to the grocery store, as they are all important.
Ingredients for the Worlds Greatest Pesto
Some Fresh basil
Bottle of Quality Olive Oil
1 cup of grated cheese (anything with a strong flavour)
1 cup of pine nuts
Six Garlic Cloves
1/4 cup of sea salt
1/4 cup of ground black pepper
Preheat your oven 450 f; place your pine nuts in a pan in the oven pan for about 20 minutes, check on them regularly as you want them to be a golem rich colour not black like charcoal. Use ideally a skillet or a small pan, then up 4 tablespoons of the olive oil on a low to medium heat. Use a garlic press to crush your six garlic cloves and then heat in the olive oil for about 5 minutes. Mix the garlic, basil, pine nuts and your cup of grated cheese with the olive oil in either a dessert dish or if you have one, ideally a mortar and pestle and move it around until you have a soft smooth paste. Because we are using quite a bit of cheese it will take a few minutes of stirring and mixing.
Having a mortar and pestle is a good investment if you like cooking. The pushing, crushing action means your flavours stay intact better.
When you think about how expensive pesto is to buy at the supermarket why would not you think about making a large batch and keeping a few jars in the fridge. The tip that Tony gave me was to put a little bit of a covering of olive oil on top of the pesto and make sure it is kept in a well-sealed jar.
Tony is coming over to our place again next week and has promised he is going to cook up the World's Best Gnocchi for us so watch out for that recipe as I will post an article about the very next morning. Bon Appetite.

Does this sound like a yummy pasta salad?
Can of artichoke hearts, leaves peeled or hearts sliced up
Small can of pearl sliced black olives
Baby bellas (crimini) mushrooms sliced thick
A perfect, organic tomato diced small
Pesto
Feta cheese
Mozzerella cheese
Lime juice
Blackpepper
Salt
Curly noodles
Sautee mushrooms with lots of margerine/butter and garlic
Cook up noodles untill tender and drain them. Let them cool.
Mix a few spoonfulls of artichoke juice from the can, olive juice, lime juice and 1/4 cup of pesto. Mix that up in a dish and pour over cooled noodles. then add feta, mozzerella, artichoke, tomato, olives and mushrooms. Season with salt and pepper and mix all up. Chill, enjoy!
I forgot spinach! Chop up spinach and sautee with the mushrooms
It sounds good, but a little on the salty side. Olives, feta, mozzerella, salt........you may want to cut the salt, and the mozzerella seems a little overkill on the cheese. I would be a little worried that the spinach would give it a bitter note.
